ATTRIBUTES of TOTAL PHENOLIC CONTENT, ANTIOXIDANT CAPACITY and IN-VITRO SIMULATED BIOACCESSIBILITY of ASTRINGENT, NON-ASTRINGENT and WILD (ROOTSTOCK) PERSIMMONS

Persimmon which is widely known as “Trabzon Hurması” and “Cennet Meyvesi” a very popular fruit with bright orange color. In the presented study, extractable, non-extractable, total phenolic content (TPC), antioxidant capacity (AC) bioaccessibility of Trabzon persimmons (astringent, non-astringent wild persimmon) were determined. The results this study indicated that all types have great importance both on TPC, AC bioaccessibility. Compared to astringent types, persimmon type had highest TPC. Another attractive result from although do not prefer for consumption, demonstrated bioaccessible phenolics found be 6.7 fold higher than 4.7 types. Especially good source natural further studies should carried out persimmon.
